Gemma Restaurant interview questions

Hiring only by recommendation, servers with NYC experience. Interview was very casual and smooth. They give you a booklet about menu and serving process and couple of days later, they call you and schedule the testing (written), very long and detailed. They don't ever review that and hire you on first impression basis.
