I applied in-person. The process took 1 week. I interviewed at The Cheesecake Factory (Boston, MA) in Apr 2010
Interview
The application has now been moved to their website for you to fill out. There is also a quasi aptitude test that is part of that application. If you're availability is NOT open they most likely will not contact you. When they do call you and set an interview you are basically half way in. You will go through a week long Morning training period which includes seeing and tasting food as well as ways to identify what you are looking at in pictures in slide presentstions. Yiu have to have complete white uniform by second day of training.

Simple interview process. Go in person and answer some basic questions with floor manager and they'll let you know if you got the job or not pretty much right there. Pretty sure everyone will get in.
I interviewed at The Cheesecake Factory (Washington, DC)
Interview
Pretty straightforward, they ask about your experience and how you would deal with certain customers. They ask about problem solving skills and customer service scenarios. They ask what you want from the job and where you see yourself in 5 years.
