You will learn a lot from the Chef Owner, from cost control, to menu planning. Pop ups, competitions, he knows how to plan. Working under Petro was one of the best things that has ever happened in my culinary life.

Not many, but depending where you're hired into, you may not have as much interaction with Petro. And Chef Petro is the reason I worked there as long as I did. Once he wasn't around as much, and I stopped learning; I got sorta burned out.
